These air fryer tomatoes with balsamic and oregano are incredibly succulent and delicious. The easiest side dish that can be added to any meal.

Holy holy holy you guys. Roasting cherry tomatoes in the air fryer opens up a whole new avenue of dishes.

We are keeping things pretty simple and tasty over here with balsamic, olive oil, oregano and garlic. When tomatoes are roasted in the air fryer they  become utterly sweet (yet savoury), super juicy, and an extremely versatile ingredient. My favourite way to enjoy them is on toast spread with goat cheese and fresh basil. And they make a beautiful addition to a mezze platter on top of white bean dips. Basically, air fried roasted tomatoes are an ingredient that will add a deliciously rich flavour punch to your next meal!

Ingredients you'll need

All you need to make these roasted tomatoes are 6 simple ingredients:

  • Tomatoes: Both cherry or grape tomatoes work. Grape tomatoes tend to be just a little smaller. you could also use a larger roma tomatoes cut in half or into quarters
  • Balsamic vinegar
  • Olive Oil: You can use either olive or avocado oil.
  • Garlic powder + oregano: this combination of spices smells incredible as the tomatoes are roasting and make them taste almost like pizza!
  • Salt
Ingredients needed to make air fried tomatoes.

Other Seasonings

  • You could use mixed dried herbs in place of the oregano and garlic.
  • Use chopped fresh basil, parsley, rosemary, thyme, or oregano instead.
  • Add some heat: add a pinch of chili flakes after cooking.

How to make roasted tomatoes in the air fryer

Before you start cooking, make sure to wash all of the tomatoes and pat them dry.

Cut each of the cherry tomatoes in half and put them in an oven safe dish.

Drizzle in the olive oil, balsamic and add the seasonings, salt, and pepper to cherry tomatoes. Toss everything really well to coat evenly.

Place the dish to the bottom of the air fryer basket. Alternatively, cover the base of the air fryer basket with baking paper and add the tomatoes on top. Cook them in the air fryer at 400 degrees for 10 minutes.

Carefully remove the roasted cherry tomatoes from the air fryer and enjoy!

Adjustments for other types of tomatoes

  • Truss/ roma tomatoes: Cut these in half and cook them the same way.
  • Large slicing tomatoes(beefsteak, heirloom tomatoes): Anything much larger than a roma tomato should be cut into quarters. This way the tomatoes will cook through and get nicely caramelised.

What to serve with air fryer tomatoes

  • Bread: Serve with crusty bread or crackers spread with goat cheese or cottage cheese.
  • Add them to a breakfast plate: Pair them with poached eggs/ tofu scramble, sauteed spinach and slices of avocado!
  • In salads: Air fried tomatoes taste amazing in pasta salads or any sort of salad where you’d normally add slices of tomatoes.
  • On cooked proteins: Use of them as a warm, juicy condiment topped on chicken, steak, salmon or baked white fish.
  • Serve as a side dish: Spruce up with crumbled feta, toasted pine nuts, or even added on top of hummus.
  • As a pizza topping

Top tips

  • When cooking tomatoes in the air fryer, be sure to be generous with your seasonings. This also creates a delicious sauce they will seep in.
  • Use an oven safe dish for easy clean up – there is no mess at all in the air fryer basket. Alternatively you will want to put down a piece baking paper in the bottom of the air fryer. This will keep the juices intact and make cleaning up a bit easier.

Storage

Fridge: Store leftover air fryer roasted cherry tomatoes in the fridge in an airtight container for up to 5 days.

I don't recommend freezing these tomatoes, as the texture will be different when you defrost them. However, you can crush them first then freeze in large ¼ cup ice cube trays– perfect for adding to pasta sauces.

Have you tried this in oven? If so, was it the same temperature? I’m curious if it produced a similar result. Because if you want to make a larger quantity the oven would be easier.

    Thanks!

Hi Kirby, if you would like to roasted larger quantity in the oven, increase the cooking time to 15-20 minutes (checking halfway). I hope you enjoy them xx

Looks amazing! Making this tonight. So glad I found this recipe. I will throw in some spinach at the end of cooking because it has to be used up and I love spinach and tomatoes! Wish me luck!
